Vegetarian Borscht

Borscht is such a weird looking soup. I didn't think I'd like it, but I like beets, so I realized I was probably just being silly.
It totally hit the spot on a day like today!

I was in the middle of eating this when I thought I should share ;)

Vegetarian Borscht

1 t butter
1 t veggie oil
3 medium beets chopped
1 parsnip chopped
1 yam chopped
(or use whatever root veggies you want)
1 onion chopped
3 cloves of garlic, minced
3 bay leaves
1 can tomato paste
6 c stock (I used chicken - not so vegetarian)
1/4 c red wine vinegar
1 T sugar (Will found it too sweet, I found it just right, but next time I'll leave it out)
3 bay leaves
salt and pepper to taste

Heat butter and oil on medium. Add veggies and stir. Put on lid and cook, stirring frequently, until onions become translucent.

Add garlic and cook for 30 seconds.

Add tomato paste and stock and bring to a boil.

Add vinegar, bay leaves, and sugar (if using).

Reduce heat and let simmer for 30 minutes.

Season with salt and pepper and enjoy :)
